Not sure your freeze-dryer batch is done?

"Done" on the screen doesn't always mean dry inside. Here's a 60-second check you can read right now. If in doubt, add dry time.

The check

The 60-second done-or-not check

Run through these before you bag a batch. If any one of them gives you pause, add dry time. An extra couple of hours costs very little; a soft bag costs the whole batch.

01

Snap the thickest piece.

No cold spots, no bendy middle, even color all the way through. Wet but not cold still counts as wet.

02

Feel for cool.

If any piece feels cooler than room temperature, add dry time.

03

Weigh it.

Weigh a tray, run more dry time, weigh again. When the number stops dropping, you're likely there. If in doubt, add more dry time.

04

Thick or juicy?

Slice or pierce it (blueberries, grapes) and plan on extra dry time.

05

Bag it right away, only when fully dry.

Airtight mylar with an oxygen absorber. Low-oxygen packaging (absorbers or vacuum) is only safe when food is completely dry. Not sure? Don't bag it; add dry time.

06

Later, if a bag goes soft, sticky or smells off, throw it out.

Don't taste-test to check.

These are signs a batch may not be done, not a guarantee it's dry or safe. When in doubt, add dry time, and follow your machine's manual.
